Seafood With The Local Thais

Tourists are always overcharged in developing and underdeveloped countries for many items. This is the way it is, probably the way it always has been, and there is really nothing you as a tourist can do about it. Blatantly, the admission to the Emerald Buddha in Thailand has two separate prices: one for Thais and a more expensive one for foreigners. I refused to go.
Sometimes, off the beaten track, you'll get what to you seem like ridiculously low prices in out of the way countries. But you're still being overcharged! That is nothing to be indignant of course, but rather to be thankful that tourism hasn't invaded yet.
In Koh Samui, Thailand, there is (or at least there was) an out of the way seafood restaurant set on the top of a cliff with gorgeous views. No farang (foreigners) knew about it and only well off locals and mainland guests dined there.
I had spent enough time in Koh Samui by then (1990) to have made some connections. One was an older gentleman who only dressed in sarong and owned a coconut plantation as well as a cheap bungalow. Between his hundred words of English and my twenty words of Thai we somehow managed to communicate on many topics.
One day he told me about the seafood restaurant and we went that night. We also gave him a bottle of scotch that we had bought at the duty free shop and that he graciously served to all the guests (mostly his family) during the meal. The restaurant had huge tanks full of every name of fish, shellfish, and crustacean. I pointed randomly at anything and everything. Plates began arriving at the table and every single morsel was sumptuous and perfectly seasoned. We ate and ate.
Amazingly, the bill was $50 U.S.! That was the local price.

Cooking Thai Food - Masaman Curry

This dish, favoured by the muslim people of the south of Thailand, is unique amongst the usual variation of Thai curries as it is more like an Indian curry and it uses mostly dried spices rather than fresh.It is usually made with chicken but works well with beef as well. It is generally not a particularly hot (spicy) curry because it does not usually contain fresh chillies and the spices are cooled by the coconut milk, potatoes and peanuts. In the West it would make a good hearty meal in the winter and could be served with a loaf of bread and a glass of Bordeaux wine.Ingredients (to serve 4 people):ยฝ lb of beef (stew beef is fine)3 tbsp peanuts4 cups of water1 potato, cubed1 tbsp cooking oil (soybean or peanut is best, corn also works)3-4 tbsp Massaman curry paste2 cups coconut milk6 Thai cardamom seeds (cracked and dry roasted)1 inch cinnamon stick (dry roasted)2 tbsp Thai fish sauce1 tbsp palm sugar2 tbsp tamarind pasteยผ of a large onion, cut into piecesFirst, open the can of coconut milk (without shaking) and remove the top layer of thick cream. Set this aside for later.Then add the water, beef and peanuts to a large pan and bring it to the boil, skimming off the layer of scum from the surface. Boil for about 5 minutes, then turn the heat right down and simmer, uncovered, for about an hour. Turn off the heat and set aside.While this is simmering, you can cook the potatoes separately. Boil them in water for about 20 minutes then drain and set aside.Next, heat the oil in a large wok or big pan over a medium heat and add the curry paste. Cook for a couple of minutes until it smells fragrant then add the cream from the top of the can, stirring all the time. Then add the beef and peanuts from the first pan, including all the broth, plus the rest of the coconut milk. Also add the fish sauce, sugar, tamarind, cinnamon, potatoes and onion. Bring this to a boil and then turn the heat down and simmer for 10 minutes. Now is the time to taste and adjust to suit your requirements, using the fish sauce, sugar and tamarind. You can also add salt or more coconut milk if you want. This curry should be slightly sweet, with a slightly sour taste from the tamarind, and not very spicy.Serve with rice and pickled cucumber as a condiment.1. heat to low and cook 10 minutes.2. Adjust seasoning with fish sauce, palm sugar and tamarind water to taste. Massaman curry should be slightly sweet with a very subtle sour note from the tamarind. Serve with pickled ginger or cucumber relish as condiments.Serves 4. This curry is even better the next day, reheated, so make double portion and freeze any left-overs.

1. Pound dried chilies and garlic together thoroughly.

The Secret Is In The Sauce A Raw Food Chef Taste Trick


        My name is Jennifer Cornbleet, but sometimes when I'm cooking, my alter-ego -- 'Saucy Susan's takes over.ย  You see, I love what sauces do for the flavor and texture of a recipe, and I'm always looking for ways to sauce-up a meal or snack.
The problem is that I don't like what the ingredients in traditional sauces do for my waistline or my arteries.ย  That's why it was important to me to re-imagine sauces in both of my raw cookbooks, Raw Food Made Easy for 1 or 2 People and Raw for Dessert.

You might be wondering what kind of sauce recipes would be appropriate to a desserts cookbook.  Raw food sauce recipes, like their traditional counterparts, can be sweet or savory. Some of my favorite raw food sauces serve as the crowning glory' on ice cream sundaes.
So in this article, I'd like to invite everyone to get sauced' the healthy way...with some delicious raw food sauce recipes that you can whip up in no time.
It's the Sauce, Silly
Do you know where a lot of the flavor can be found in a dish?  That's right!ย  In the sauce.ย  After all, isn't fettuccine just pasta until you spoon on Alfredo Sauce? Isn't a vegetable spring roll just bunny food' until you give it a whole new personality by drizzling on a spicy, flavorful Thai-style peanut sauce?
Imagine ice cream without hot fudge sauce.ย  Or think about where a certain fast food giant would be today if it served two all-beef patties,  lettuce, cheese, pickles and onion, on a sesame seed without special sauce'?.
It's easy to see that to get more flavor into every bite, the secret is in the sauce. ย What is less easy to see is that the ingredients that go into typical sauces โ€“ like butter, cream, high fructose corn syrup, hydrogenated oils, refined sugars, etc โ€“ are not healthy.
For example, there are 850 Calories in a single serving of Fettuccine Alfredo from Olive Garden and 432 of those calories are from fat.ย  ย As for the Big Mac, it has about 560 calories...with nearly 100 of them coming from the sauce which is made from salad dressing, pickles, and brown sugar.
Dessert sauces are the biggest culprits when it comes to sneaking in fat and calories.ย  A two-tablespoon serving of a commercial hot fudge sauce manufactured by Smuckers, for example, has 4.5 grams of fat and 18 grams of sugar.ย  That doesn't sound so bad if you can limit yourself to just two tablespoons...but I know that I can't!
There are other problems with traditional sauces, too, that occur because of the processed foods used to make them.ย  The recent problem with commercial peanut butter underscores how much healthier it is to use ingredients that come straight from your garden...or your local farmer.
That's the whole theory behind the raw food movement:ย  using fresh, local ingredients to make delicious meals and snacks.ย  So I've found ways to make Alfredo without the cream...peanut sauce without the processing...and lip-smacking dessert sauces without a hint of refined sugar.

Raw Food Sauce Recipe Ideas
Raw food sauces are (you've heard this phrase before) delicious and nutritious.ย  For example, my recipe for raw food Fettuccine Alfredo dresses translucent ribbons of pale green zucchini with a sauce made from soaked cashews and a tasty spice blend.ย  Believe me; you won't miss the cream or the butter (or the fat and calories).
If you like your sauces green instead of white, try my raw food Pesto.ย  Like the original, my recipes calls for basil leaves, olive oil, garlic, salt, and pine nuts.ย  The only difference is that the pine nuts are raw instead of roasted.
One of my favorite raw food sauce recipes is the Mock Peanut Sauce that I created for Raw Food Made Easy for 1 or 2 People. Traditionally, this sauce calls for roasted peanuts, but I use raw almond butter instead.ย  As well as retaining more nutrients, I think raw almond butter actually tastes better in the recipe.
You can make your own almond butter or purchase it in stores.ย  Just make sure you choose raw almond butter.
Mock Peanut Sauce

1/2 cup raw almond butter
1/4 cup water
1 tablespoon fresh lemon juice
2 tablespoons pure maple syrup
2 teaspoons tamari
1/2 teaspoon crushed garlic
1/4 teaspoon grated fresh ginger
Dash cayenne
Dash salt
Place all the ingredients in a blender and process until smooth

This simple raw food sauce can be kept for up to five days in the refrigerator.ย  Drizzle it over your favorite veggies at lunch or dinner or use it as a dipping sauce to add Asian flair to the cruditรฉs your serve at your next party.
Every Day Is Sundae
I created my raw food Chocolate Ganache Fudge Sauce for all the chocoholics I know (including me!), but I never miss a chance to introduce people to my rich, nutty Caramel Sauce.ย  Instead of the butter and sugar of a traditional caramel, this nutty brown sauce call for dates, cashews, vanilla...and dark agave syrup.
Agave syrup (also called nectar) is a natural sweetener made from the juice of the agave plant. I use the dark version in this recipe to give the caramel a deep, molasses-like flavor and color.
Raw Food Caramel Sauce Recipe

1/2 cup raw cashew butter
1/2 cup dark agave syrup
1/2 cup Date Paste (see below)
2 tablespoons vanilla extra
1/8 teaspoon salt


Place all the ingredients in a blender and process until smooth.

Date Paste is made by soaking Medjool dates in filtered water and then processing the fruit along with the soaking water into a paste-y consistency.
This caramel sauce is a โ€˜natural' when it comes to topping off a raw food ice cream sundae where nut milk replaces the dairy variety.ย  It's also amazing on top of cake or in-between the layers.
For a really decadent dessert, you can drizzle Caramel Sauce and Chocolate Sauce over ice cream and top with crushed raw nuts and dried fruits.ย  Amazing!
When You Want to Warm Up After a Cool Down
Like the savory raw food Mock Peanut Sauce above, the sweet raw food Caramel Sauce can be stored in the refrigerator.ย  To take the โ€˜chill off' before serving, follow this simple process:

Place 2 inches of water in a saucepan and bring to boil.
Turn off the heat.
Place a small bowl of sauce in the hot waterย  (The sides of the bowl should be high enough so that the water from the saucepan cannot flow into the sauce)
Let sit for 20 minutes
Stir to achieve proper consistency.

As an alternative, you can place the bowl in a food dehydrator at 105 degrees Fahrenheit for 10 minutes.

2 easy to cook Thai dishes

To help you celebrate the Thai New Year, which takes place during 13th - 15th April, I have put together to very tasty and popular dishes that you can prepare and cook quite easily and impress your family and friends in the process. So lets get started.
Sweet chilli chicken stir fry This stir fry is simplicity itself - it not only tastes great but is low in fat, too
Serves 2 Ready in 15 minutes
2tbsp vegetable oil 4 chicken breasts, sliced thinly A handful green beans, trimmed 2 sachets Sweet Chilli & Garlic Stir Fry Sauce Jasmine rice, to serve

Heat the oil in a wok or frying pan until hot. Add the chicken slices and stir fry for 2-3 minutes. Then add the beans.
Continue to stir fry until the chicken is cooked through and tender, and the beans are cooked but still have bite.
Add the sweet chilli and garlic stir fry sauce and toss to coat. Remove from the heat and serve with jasmine rice.

Pork fried with Thai red curry paste
Using curry paste gives you concentrated flavour in an instant and works really well with all types of meat
Serves 2 Ready in 10 minutes
2tbsp vegetable oil 1tbsp Red Curry Paste 275g pork fillet, trimmed and finely sliced 175g green beans 2tbsp Fish Sauce 1tbsp Coconut Cream 1tsp sugar Rice noodles or jasmine rice, to serve

Heat the oil in a wok or frying pan, add the Thai red curry paste and stir well. Add the pork and stir fry for a minute or two until the meat is cooked through.
Add the beans, fish sauce, coconut cream and sugar, and stir thoroughly. Cook for 2-3 minutes then transfer to a serving dish.
Serve with rice noodles or steamed jasmine rice

Thai rice curry with herbed chicken
Ingredients
60ml  coconut milk1 shallot, finely chopped2 garlic cloves, finely chopped1tbsp fresh ginger, finely chopped4 chicken breasts, skinned and boned1tbsp curry powder ผtsp turmeric powder300g brown jasmine rice3tbsp soy sauce1tbsp miso paste4 cardamom pods1 bay leaf1 cinnamon stick
Method
Heat the coconut milk in a large saucepan or casserole dish with a lid. Add shallot, garlic and ginger, cook over a low to medium heat for 3-5 minutes. Add chicken and turn up the heat until it is evenly browned. Add curry powder and turmeric powder and stir well to evenly coat chicken. Add rice, soy sauce and miso paste, and stir well. Pour in 250 ml water and stir well. Add cardamom pods, bay leaf and cinnamon stick. Cover and bring to the boil. Reduce heat and simmer gently for 30-35 minutes or until the rice is cooked and tender. Remove from heat and leave to stand for 10 minutes with the lid on. After 10 minutes, fluff the rice with a fork and discard cardamom pods, bay leaf and cinnamon stick. Serve rice curry warm with cucumber relish on the side.
